Vegetarian Reuben Sandwich Recipe

Reuben Sandwich with Vegetable Chips and Dill Pickle

A traditional Reuben Sandwich is made with Pastrami (smoked beef), Swiss Cheese, Sauerkraut, Rye Bread, and Russian Dressing.  

The Vegetarian Reuben Sandwich is made with the same ingredients except the beef.

Vegetarian Deli Slices replace the Pastrami, with Vegetarian Ham Slices, Turkey Slices, or Hickory Smoked Deli Slices.

HOW TO PREPARE

Ingredients

To replace the Pastrami, use either Lightlife or Tofurky brand deli slices.

1-2 Slices: Lightlife Vegetarian Deli Ham Slices or Deli Turkey Slices, or Tofurky Hickory Smoked Deli Slices.

2 Slices Caraway Seeded Rye, Seedless Rye, or Pumpernickel Bread.

1-2 Slices Vegan Swiss Cheese.  If you eat dairy, use Swiss Cheese.

Thousand Island Dressing

1/4 Cup Sauerkraut

Margerine or Cooking Oil

Instructions

  1. Preheat large skillet, or griddle on low heat.  If the heat is too high, the bread will burn.
  2. Lightly coat one side of both bread slices with margarine or oil.  The oiled side will be placed in the skillet.
  3. Spread non-oiled sides with Thousand Island Dressing. Place layers of deli slices, cheese, and sauerkraut on one slice.
  4. Put both sides together, and grill sandwich about 15 minutes each side, or until browned.
  5. Serve hot.

Raw Beets – Nutritional Powerhouse

Bored with beets?  Try combining them with avocados.  The combo is well worth a try, because beets and avocados are a health blockbuster.  

Cut your prep and clean-up time, with this simple veggie combo.

If you’re in a hurry, or don’t like spending alot of time in the kitchen, this is for you.

Beet Preparation Methods

Cooked: remove tails, leave skins intact, slice and steam the beets.  Serve.

Raw: remove tails, peel the skins, grate and serve.

Raw: remove tails, peel the skins, and crank them through a Veggie Spiralizer.  Serve.

For added zest, squeeze a fresh lemon over the beets, add salt and serve. Or, use apple cider vinegar instead of lemon juice. 

Avocado Preparation Methods

Peel, remove seed, slice avocados and serve alongside beets.

Peel, remove seed, and mash avocados just as you would prepare mashed potatoes.

RAW AVOCADOS

Raw Avocados – Omega 3

For added flavor, squeeze a fresh lemon over the avocados, add salt and serve.

Health Benefits

Beets contain potassium, magnesium, iron, calcium, fiber, and B Vitamins.  Avocados contain Omega 3 fatty acids (Oleic), antioxidants, carotenoids (antiinflammatory).  Lemons are anti-biotic, anti-cancer, and an excellent source of Vitamin C.  More about beet nutrition here, avocado nutrition here, and lemon here.

Villa Linguine: Quick Pasta Sauce

Are you in a hurry to eat?  These days most people are. Here are three healthy suggestions for topping your linguine.

Linguine With Marinara Sauce

Italian Style Raw Tomato Sauce:  Place very ripe tomatoes in a blender or food processor.  Add fresh oregano, basil, and salt to taste. Serve over cooked linguine.
